So many variations can be done with this. Here is how I did this one.
I already made my sauce last night and cooked 11 oz of beef. I added no salt taco seasoning that I got at New Morning in the bulk season section and added my own salt. You can season it how you want. Just remember to use pink salt. I made my sauce but you can use Rao’s basil and tomato Trader Joe’s variation. It’s not as thick. I like Rao’s better.

Ok. I used 3 zucchinis for this and cut them the long way. Salt them and let sit to get the extra water and bitter out. Use a towel to soak all the water off. Lay out like this, put your precooked scrambled meat on.
Lay out the “noodles”.
Lay out the beef on top.
Spread a thin layer of sauce.
Sprinkle some parm cheese.
Repeat
Noodles
Meat
Sauce
Cheese
and cook.
Bake at 425 for 15 or 20 min until the top is brownish then cover to cook the rest for 30 to 40 minutes. Cooking it uncovered is important to evaporate the water. If you find this too watery, turn down the heat to 350 or so and cook out all the liquid.
